New technologies to design personalised foods

Consumer’s demand for healthier food products and the need to develop products for populations with specific needs i.e swallowing disorders, is driving the new trends in food research. In this half day seminar, you will get the latest from experts in emerging new methods and technologies to design personalised foods.  We will have talks about novel methodologies to measure textures in vivo and in vitro, and food design by 3D printing and natural texturisers.
